Dandelion Green Salad

Ingredients:

1 bunch (about 8 oz.) dandelion greens, washed; if greens are bitter, remove center ribs
1/3 cup sun-dried tomatoes in oil, drained and sliced
1/3 cup sliced almonds, toasted
2 Tbsp. almond oil
1 Tbsp. Champagne vinegar
2 oz. fresh goat cheese
Freshly ground black pepper to taste

Directions:
  1. In a large salad bowl, combine greens, sun-dried tomatoes, and toasted almonds. Whisk together almond oil and vinegar and toss with greens mixture to coat.
  2. Dish salad onto serving plates and top each with crumbled goat cheese and freshly ground black pepper
