Scallion Rice

• 4-1/2 cups of brown rice
• 1-1/2 tsp of low-sodium bouillon granules (available in a variety of flavors)
• 1-1/4 cup of chopped scallions (green onions)

Cook rice according to instructions on the package. Generally speaking, 1 cup of rice cooks best with 2 cups of water, so the ratio of water/rice is 2:1. However, for slightly stickier or softer rice, you may want to add another ½ cup of water.

Combine the cooked rice, scallions, and bouillon granules. Divide into 1-cup servings. Brown rice is typically higher in fiber than white rice, and contains natural levels of B-vitamins and trace minerals.
