Most people have heard about gluten, but unless they really need to, they may not care much about it one way or the other.
The “muscle of flour”.
Gluten is a protein found in wheat and many grain products. It provides the structure to wheat breads and is used to make the “meat-like” vegan meal components, seitan. In fact, gluten is considered the “muscle of flour,” and was given that title in China back in the 11th century. (It had been known by noodle makers for about 500 years before earning that name, however.)
As useful as gluten is, however, it isn’t for everyone. That’s because some people simply don’t digest gluten well.
When the digestive system has difficulty with gluten.
There are plenty of reasons for this. One of the more popular theories in circulation is that because many human cultures developed as hunting and gathering societies, grains in the diet were fairly limited. Instead, meats, fish, fruits, vegetables, and nuts were the mainstays.
While that theory remains debatable, for some, there are very real manifestations of gluten in the digestive system. They include:
· Gas†
· Bloating†
· Occasional bloating and discomfort†
Many people have gone on gluten-free diets to support their health; maybe you’re one of them. The trouble is, gluten can be a bit sneaky.
It’s not really gluten’s fault. It just seems to find its way into many processed food. Even chewing gum may use gluten in the powdery stuff that keeps the gum from sticking to the wrapper.
The challenge of avoiding hidden gluten.
Even careful reviews of food labels or a question-and-answer session with your waiter or waitress can’t always root out hidden sources of gluten. But you can have a little help in your corner.

While Gluten Defense will reduce the level of reactive gliadin and gluten proteins in a meal, it is advised that celiac disease sufferers continue with their normal gluten exclusion diet as even small amounts of gliadin can cause adverse reactions in the most sensitized individuals.
