Ingredients:
1 cup Greek-style yogurt
2 tablespoons orange juice
1 orange in segments, cut in half
½ cup grapefruit segments (about ½ a grapefruit), cut in half
½ cup blueberries
2 tablespoons slivered almonds
2 tablespoons toasted coconut
2 sprigs of fresh mint leaves


Directions:
1)    In a bowl, stir the yogurt with the orange juice, and set aside.
2)    Mix the orange and grapefruit segments and the blueberries together and set aside, reserving 6 blueberries for garnish.
3)    Place ¼ cup of yogurt into two 8-oz glasses or parfait bowls.
4)    Next, layer ¼ of the fruit mixture on top of the yogurt in each glass.
5)    Sprinkle ¼ of the almonds and coconut on top.
6)    Layer the rest of the yogurt on top of the fruit in each glass, then top with the remaining fruit, almonds, and coconut.
7)    Garnish each glass with 3 blueberries and a sprig of mint. Serve immediately.
